Collaborating with the founders to navigate the business through the most turbulent period the industry has faced. Focused on the development of the FIGO Italian neighbourhood restaurant. Spearheading the implementation of systems, processes & change
management. Relaunched FIGO Stratford, redeveloped brand proposition and elevated the food & drinks menus. During Covid-19 we successfully grew the flagship location from £1.6m T/O to £5m T/O.
Busaba Eathai
Accelerated progress and long-term success by across 20 sites (14 restaurants and six Deliveroo editions) with annual T/O of £31m+.
Cofton Holiday Park
Worked with the senior exec team to develop a succession plan with key hires found and onboarded ready to support. Optimised operating procedures, increasing efficiencies within all teams across the holiday park. Developed a robust food and beverage strategy, enhancing the overall dining experience for guests and contributing to increased customer satisfaction. Defined and established core brand values that align with Cofton Holiday Park’s identity and vision.
TRG
Led the growth of the Coast-to-Coast brand from 1 to 25 locations across the UK, managing over 75 team managers and 700 team members. Reduced employee turnover through strategic succession planning and personal coaching, developing junior managers into key leadership roles. Outperformed competitors by setting and achieving aggressive KPIs while managing P&L and EBITDA, overseeing a brand with a combined £31m T/O.
